Gassho is an Asian custom where the hands are placed palms together as though in prayer, and the person then bows out of respect and humility. Shohei is Dirk's dharma name, which is a name given to him by a Preceptor (in our case here, either Jundo or Taigu) which is a name that "speaks" to them about Shohei. This is usually given during a jukai (where participants accept the Bodhisattva Precepts) ceremony. That's the down and dirty.
