    Work of Tenzo chief cook

    Hi

    I write from Toshoji monastery.

    I spend 9 month at here,and I work as Tenzo(chief cook)at 3 month.

    Tenzo make meal for monks and guest.

    When I work as Tenzo I select seasonal varieties food(Food is only donation and we don’t have meat and fish in ordinary time)

    So sometimes difficult to cook,because we can’t buy food to make meal.

    When I do Tenzo ,I try to think about schedule and condition of monk,because I need to think about flavor.

    And I need to think about amount of food.

    And I need to keep clean cooking room.

    Tenzo can’t make mistake,so I suffer at pressure but very important work at temple.

    Also master Dogen said in Tenzo Kyokun.



    Unfortunately I can’t take a picture but I try to share after I leave here.

    Would you be the official Tenzo at Treeleaf too? (Probably much less hard work, because we do not have a kitchen.)

                    I try to write Japanese version food.

                    Mixed rice(Baced souse,soy souse ,Mirin,salt and
                    Konbu sea weeds.Include fried Tofu,carrot,ginger and green onion)

                    Soup(Based souse soy sauce and Konbu.Include Wakame sea weeds and Japanese mashroom.

                    Nomino soup(Based souse Katsuo and soy sause and Mirin and suger.Including sweet potatoes and spinach)

                    Sunomono salad(Based souse vinegar and soy sauce and suger.Include Chinese cabbage and Carrot)

                    If I can write another version I will try to write Chinese and western(Italian?)version.
