This is a quick go to recipe when life is hectic but you still want to eat properly.
Ingredients
•A piece atsuage (thick deep fried tofu)
•60 g cabbage
•30 g carrot
•8 snow peas
•a slice of ginger
•1 tsp sake
•2 tsp miso
•2 pinches of salt
Method
1.Cut the cabbage into bite-sized pieces, thinly slice the carrot and ginger.
2.Cut the atsuage into triangular pieces.
3.Sprinkle a pinch of salt in a frying pan.
4.Layer the cabbage, carrot, ginger and atsuage in the pan.
5.Sprinkle the sake over the ingredients and add another pinch of salt.
6.Place the miso on top.
7.Cover and simmer over medium-low heat until tender.
8.Add the snow peas and cook briefly until bright green and just tender.
9.Finally, stir everything together so the miso coats all the ingredients evenly.
●
Note – with atsuage / deep fried tofu, I prefer to soak it for a few minutes in very hot water to get rid of a lot of the frying oil.
