Fridays and Saturdays work well for me. I could try to work out Sunday but it would take some creative juggling.

I'll be trying to join as well from Norway (CET). My main experience with oryoki is a stressful one, with the fear (and reality) of doing it "wrong" during a sesshin. There were quite a few novices during that sesshin, so I didn't feel alone in my ordeal ;-)
In any case, I can see that after you master the movements it becomes just like kinhin a very nice zazen without the "za". So, I want to learn...

Sunday 4PM GMT (Greenwich Mean Time, which has no daylight savings)?

I believe, with the time change, that would be correct.

Someone should double check. I am notorious for being bad at this sort of thing.
